  • 4 large carrots, peeled Use fresh, firm carrots for the best texture.
  • 1 tablespoon sesame seeds, toasted Toast in a dry skillet for added flavor.
  • 1 green onion thinly sliced
For the dressing
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce or tamari Use tamari for a gluten-free option.
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey or maple syrup Adjust sweetness to taste.
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger

Method
 

Preparation
  1. Peel the carrots into long, thin ribbons using a vegetable peeler.
  2. In a small bowl, whisk together the rice vinegar, soy sauce or tamari, sesame oil, lime juice, honey or maple syrup, minced garlic, and grated ginger until smooth.
  3. Place the carrot ribbons in a medium bowl.
  4. Pour the dressing over the carrot ribbons and toss gently to coat.
  5. Top with sesame seeds and green onion.
