Preparation
- Peel the carrots into long, thin ribbons using a vegetable peeler.
- In a small bowl, whisk together the rice vinegar, soy sauce or tamari, sesame oil, lime juice, honey or maple syrup, minced garlic, and grated ginger until smooth.
- Place the carrot ribbons in a medium bowl.
- Pour the dressing over the carrot ribbons and toss gently to coat.
- Top with sesame seeds and green onion.

Store leftovers in an airtight container in the refrigerator for up to three days. For best results, keep dressing separate until ready to serve. Freezing not recommended due to texture changes.
