  • 1 cup breadcrumbs (plain or panko) Panko gives a lighter, crunchier crust; gluten-free options available.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat each chicken breast dry with paper towels. Season both sides with salt and pepper and arrange in a single layer in the dish.
  3. Drizzle a little olive oil over each breast.
  4. Spread about a tablespoon of Caesar dressing over the top of each breast.
  5. Sprinkle the grated Parmesan evenly over the dressing.
  6. Press the breadcrumbs onto the dressing to form a compact crust.
Baking
  1. Bake for 25 to 30 minutes until the crust is golden brown and the chicken reaches an internal temperature of 165°F (74°C).
  2. Remove from oven and let rest for 5 minutes before serving.

Notes
