  • 1 cup refried beans (canned or homemade) For homemade, consider adding spices for flavor.
  • 1 1/2 cups shredded cheddar cheese or Mexican blend Feel free to experiment with different cheese blends.
  • 6 large flour tortillas, burrito size Corn tortillas can be used but may require extra care when rolling.
  • 2 tablespoons vegetable oil for brushing or frying

Preparation
  1. Begin by prepping your vegetables and measuring your ingredients.
  2. Heat a skillet over medium heat. Add the ground beef and diced onion, cooking until the beef is browned.
  3. Drain any excess grease, then return the pan to medium heat. Stir in the minced garlic, taco seasoning, and salsa, allowing the mixture to simmer for about 3-4 minutes.
Assembly
  1. Lay a flour tortilla flat on your workspace. Spread a layer of refried beans, then add a generous spoonful of the beef mixture followed by a sprinkle of cheese.
  2. Fold in the sides of the tortilla and roll it up tightly to form a chimichanga.
Cooking
  1. For the oven method, preheat your oven to 400°F. Brush each chimichanga with oil and bake for 18-20 minutes or until golden brown.
  2. For the skillet method, heat oil in a skillet over medium heat. Cook the chimichangas seam side down for 2-3 minutes on each side until they are beautifully golden.
