Preparation
  1. Preheat your Blackstone griddle to medium-high heat. Lightly oil the surface to prevent sticking.
  2. In a mixing bowl, combine the diced chicken with soy sauce, sesame oil, minced garlic, minced ginger, and a pinch of salt and pepper. Let this marinate for 5 to 10 minutes.
Cooking
  1. Once your griddle is hot, spread the marinated chicken on it without stirring for about 2 minutes—this helps develop a nice sear.
  2. After 2 minutes, stir the chicken and cook until it reaches an internal temperature of 165°F, which should take an additional 3 to 5 minutes.
  3. Push the cooked chicken to the side of the griddle. Add your mixed vegetables and stir-fry for about 4 to 5 minutes until they are tender-crisp.
  4. Combine the chicken and vegetables, taste to adjust seasoning as necessary, and serve over hot cooked rice.
