Cooking
- Once your griddle is hot, spread the marinated chicken on it without stirring for about 2 minutes—this helps develop a nice sear.
- After 2 minutes, stir the chicken and cook until it reaches an internal temperature of 165°F, which should take an additional 3 to 5 minutes.
- Push the cooked chicken to the side of the griddle. Add your mixed vegetables and stir-fry for about 4 to 5 minutes until they are tender-crisp.
- Combine the chicken and vegetables, taste to adjust seasoning as necessary, and serve over hot cooked rice.
