  • 4 cups fresh corn kernels (or canned/frozen, drained and thawed) Fresh corn preferred when in season.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh cilantro, chopped Can substitute with parsley if desired.
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice Adjust to taste.
  • Salt and pepper to taste

Preparation
  1. In a large mixing bowl, combine the fresh corn, cherry tomatoes, red onion, bell pepper, and cilantro.
  2. In a separate bowl, whisk together the olive oil and lime juice, seasoning with salt and pepper to taste.
  3. Pour the dressing over the vegetable mixture and gently toss to coat everything evenly.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to meld beautifully.
