For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar for the crust
For the filling
  • 1 package cream cheese, softened (8 oz)
  • 1 cup sugar for the filling
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups diced tart apples (Granny Smith or similar), peeled if preferred
  • 1 cup caramel sauce store-bought or homemade
  • 1 teaspoon cinnamon

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare a 9×13 inch baking dish by greasing it with butter or nonstick spray.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of sugar. Mix until the mixture is moistened.
  3. Firmly press the graham cracker mixture evenly across the bottom of the prepared dish to form a crust.
  4. In a large bowl, beat the softened cream cheese with 1 cup of sugar and vanilla until the mixture is smooth and free of lumps. Scrape the bowl to incorporate all ingredients.
  5. Add the eggs one at a time, mixing briefly after each addition until just combined.
  6. Gently fold the diced apples into the cream cheese mixture using a spatula, ensuring even distribution of the fruit.
  7. Pour the cream cheese filling over the crust and smooth the top with a spatula.
  8. Drizzle caramel sauce over the surface, creating gentle swirls with a knife or skewer.
  9. Sprinkle the cinnamon evenly over the top.
Baking
  1. Bake for 30 to 35 minutes until edges are set and lightly golden; the center may wobble slightly but should not be liquid.
  2. Allow the bars to cool to room temperature, then refrigerate for at least 2 hours before cutting into squares.
