  • 8 ounces rotini pasta Use gluten-free rotini for a gluten-free version.
  • 1 pound cooked chicken, cubed Leftover or rotisserie chicken can be used.
Vegetables and Toppings
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped Alternative greens such as spinach or arugula can be used.
  • 1/2 cup grated Parmesan cheese Increase for a stronger cheese flavor.
  • 1/4 cup Caesar dressing Can be substituted with ranch dressing for a different flavor.
  • Salt and pepper to taste
  • Croutons for topping Optional but recommended.

Method
 

Preparation
  1. Cook rotini pasta according to package instructions until al dente, then drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine cubed cooked chicken, halved cherry tomatoes, and chopped romaine lettuce.
  3. Drizzle Caesar dressing over the cooled pasta and other ingredients, tossing gently until everything is evenly coated.
  4. Season with salt and pepper to taste.
