Ingredients

For the crust
  • 1 package sugar cookie dough (can be store-bought or homemade)
For the filling
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
For the toppings
  • Assorted fresh fruits (e.g., strawberries, blueberries, kiwi, grapes, mango, peaches) Feel free to mix and match fruits!
  • 1 tbsp lemon juice (optional) Especially useful for apples and bananas to prevent browning.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Press the sugar cookie dough evenly into a greased pizza pan or a 12-inch round baking sheet.
  3. Bake according to the package directions, or until the edges are golden and the center is set.
  4. Once baked, remove from the oven and allow the cookie crust to cool completely on a wire rack.
Filling
  1. In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla until the mixture is smooth and creamy.
  2. Spread this cream cheese mixture evenly over the cooled cookie crust.
Topping
  1. Slice and arrange the fresh fruits in concentric circles or create a beautiful rainbow pattern on top.
  2. For fruits like apples, pears, or bananas, lightly drizzle lemon juice over them to prevent browning.
  3. Chill the assembled pizza for at least 20 minutes to help the filling firm up.
  4. Slice like a pizza and serve chilled.
