  • 4 cups chicken broth Opt for low-sodium
  • 2 cups ramen noodles Choose fresh or packaged
  • 1 cup heavy cream Can swap with coconut milk for a dairy-free version
  • 4 cloves garlic, minced
  • 1 cup mixed vegetables Bell peppers, carrots, peas, or a frozen blend
  • 2 tablespoons soy sauce Can use tamari for gluten-free
  • to taste Salt and pepper Adjust according to preference
  • for garnish Thinly sliced green onions Optional garnish

Method
 

Cooking the Chicken
  1. Heat 1 to 2 tablespoons of neutral oil in a large pot over medium heat.
  2. Add the sliced chicken and cook for about 4 to 6 minutes until browned and cooked through.
Adding Garlic and Broth
  1. Push the chicken to one side of the pot, then add the minced garlic and sauté for 1 to 2 minutes until fragrant.
  2. Pour in the chicken broth and bring to a boil.
Cooking Noodles and Vegetables
  1. Add the ramen noodles and mixed vegetables to the pot, cooking according to package instructions (roughly 2 to 4 minutes).
  2. Lower the heat and stir in the heavy cream and soy sauce.
  3. Season with salt and pepper to taste.
Serving
  1. Ladle the creamy ramen into bowls, garnish with sliced green onions, and serve immediately.
