  • 1 cup fresh spinach Frozen spinach can be used; thaw and drain excess water.
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then cook for about 5 to 7 minutes per side until golden brown.
  3. Remove the chicken and set it aside.
  4. In the same skillet, add minced garlic and sauté for about 1 minute or until fragrant.
  5. Slowly pour in the heavy cream, stirring continuously until it reaches a gentle simmer.
  6. Add fresh spinach, sun-dried tomatoes, Parmesan cheese, and Italian seasoning to the sauce.
  7. Let it simmer until the sauce thickens to your liking.
  8. Carefully return the chicken to the skillet, ensuring it’s well-coated with the creamy sauce.
  9. Heat through for an additional 2 to 3 minutes.
  10. Serve immediately, garnished with extra Parmesan cheese if desired.
