Preparation
- In a medium saucepan, combine the water, butter, 2 tablespoons of sugar, and salt. Bring this mixture to a boil over medium heat.
- Once boiling, remove the saucepan from heat and stir in the flour using a wooden spoon until you achieve a smooth dough that pulls away from the sides of the pan.
- Let the dough cool for about 5 minutes to prevent cooking the eggs when added.
- Add the eggs one at a time, mixing after each addition, until your dough becomes smooth and glossy.
- Stir in the vanilla extract for that extra flavor.
- Preheat your air fryer to 375°F (190°C) while you finalize the dough.
- Fill a piping bag with the dough and pipe 1-inch rounds onto a piece of parchment paper.
Cooking
- Carefully transfer the parchment with the piped dough into the air fryer basket or lift them off with a spatula if you're not using parchment paper. Lightly spray with cooking spray.
- Air fry the churros for 8 to 10 minutes, or until they turn a lovely golden brown.
Coating
- Mix the remaining 1/2 cup of sugar with the cinnamon in a bowl.
- Toss the hot churro bites in the cinnamon-sugar mixture and serve warm.

Notes
Store leftovers in an airtight container at room temperature. Best consumed within a couple of days. For freezing, allow to cool completely before placing in a freezer-safe bag. Reheat in the air fryer for a few minutes to restore crispness.
