For the filling
  • 1 pound ground beef Can substitute with ground turkey or plant-based options.
  • 1 cup shredded cheese Cheddar or Mexican blend works well.
  • 1 teaspoon taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
For assembly
  • 8-10 small corn tortillas Warm to make pliable.
  • Cooking oil For frying or brushing if baking.
  • Sour cream or salsa For serving.

Method
 

Preparation
  1. Heat a large skillet over medium heat and add the ground beef. Cook until it's browned, breaking it into small pieces. Drain any excess fat.
  2. Sprinkle in the taco seasoning, garlic powder, and onion powder. Stir well and cook for an additional 30 seconds.
  3. Remove the skillet from heat and stir in the shredded cheese, allowing it to melt into the beef mixture.
  4. If baking, preheat your oven to 400°F (200°C). Warm the corn tortillas to make them more pliable.
Assembly and Cooking
  1. Spoon the beef mixture onto the edge of each tortilla and roll tightly, tucking the seam underneath.
  2. For baking, arrange the taquitos seam-side down on a baking sheet, brush lightly with oil, and bake for 15 to 20 minutes.
  3. For frying, heat oil in a skillet and fry the taquitos seam-side down until they are golden and crispy. Drain on paper towels.
  4. Serve hot with sour cream, salsa, or your favorite dipping sauces.

Notes
