Preparation
- Preheat your oven to 425°F (220°C). Slide a baking sheet into the oven to heat while you prep.
- Wash the sweet potatoes and peel if you prefer smoother fries. Cut into 1/4 inch thick sticks so they cook evenly.
- Place the cut fries in a bowl of cold water. Soak for 30 minutes to draw out excess starch.
- Drain and spread the fries on paper towels. Pat very dry to remove surface moisture.
- In a large bowl, toss the dried fries with olive oil, garlic powder, paprika, salt, black pepper, and cornstarch if using.
Baking
- Carefully remove the hot baking sheet from the oven. Arrange the fries in a single layer with space between pieces.
- Bake for 25 to 30 minutes, turning once about halfway through, until the edges are golden and crisp.
- Remove from the oven and let them rest for a few minutes before serving so they firm up slightly.
