  • 2 tablespoons olive oil (substitute avocado oil for a higher smoke point)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or sweet) Smoked gives a deeper flavor
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch (optional, helps crisping) Highly recommended for crispiest exterior

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Slide a baking sheet into the oven to heat while you prep.
  2. Wash the sweet potatoes and peel if you prefer smoother fries. Cut into 1/4 inch thick sticks so they cook evenly.
  3. Place the cut fries in a bowl of cold water. Soak for 30 minutes to draw out excess starch.
  4. Drain and spread the fries on paper towels. Pat very dry to remove surface moisture.
  5. In a large bowl, toss the dried fries with olive oil, garlic powder, paprika, salt, black pepper, and cornstarch if using.
Baking
  1. Carefully remove the hot baking sheet from the oven. Arrange the fries in a single layer with space between pieces.
  2. Bake for 25 to 30 minutes, turning once about halfway through, until the edges are golden and crisp.
  3. Remove from the oven and let them rest for a few minutes before serving so they firm up slightly.

Notes
