Ingredients

Main Ingredients
  • 4 pieces chicken breasts about 1.5 to 2 pounds
  • 1 can cream of chicken soup 10.5 to 11 ounces
  • 1 packet Italian dressing mix dry
  • 1 cup sour cream
  • 8 ounces angel hair pasta
  • to taste Salt
  • to taste Pepper
  • as needed Chopped parsley for garnish, optional

Method

Preparation
  1. Begin by placing the chicken breasts in the bottom of your slow cooker in a single layer if possible.
  2. In a medium bowl, mix the cream of chicken soup together with the dry Italian dressing mix until the mixture is smooth.
  3. Pour this creamy blend over the chicken, ensuring each piece is well-coated.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and reaches an internal temperature of 165°F.
  5. About 30 minutes before you’re ready to enjoy, stir in the sour cream until it’s fully incorporated and warmed through; avoid boiling after adding the sour cream.
  6. While the sauce is finishing, cook the angel hair pasta according to the package instructions and drain well.
  7. Serve the creamy chicken mixture over the drained pasta. Don’t forget to add salt and pepper to taste.
  8. For an extra touch of color, sprinkle chopped parsley on top just before serving.

Notes

You can swap out chicken for turkey or use a plant-based meat alternative. For extra flavor, consider adding sautéed onions or garlic. Substitute angel hair pasta with penne or fusilli if desired. For a thicker sauce, blend in a little cornstarch slurry toward the end of cooking. This dish pairs well with garlic bread, salad, or steamed vegetables.
