  • 1 can black beans, rinsed and drained
  • 1 can corn, drained Frozen or fresh corn can be used.
  • 1 can diced tomatoes
  • 1 onion, diced Sauté before adding for enhanced flavor.
  • 2 cloves garlic, minced Sauté before adding for enhanced flavor.
  • 1 tablespoon chili powder Adjust for heat preference.
  • 1 teaspoon cumin Adjust for preference.
  • 4 cups chicken broth
  • to taste salt and pepper
  • Crispy tortilla strips for topping Use for serving.
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Method
 

Preparation
  1. Place the chicken breasts into your slow cooker.
  2. Add the black beans, corn, diced tomatoes, onion, and garlic.
  3. Sprinkle in the chili powder and cumin, then pour in the chicken broth. Season with salt and pepper to your liking.
  4. Cover the cooker and set it to low for 6 to 8 hours, or high for 3 to 4 hours, until the chicken is thoroughly cooked.
  5. Once cooked, take the chicken out, shred it with two forks, and return it back to the pot.
  6. Serve hot, topped with crispy tortilla strips, fresh cilantro, and lime wedges.
