Preparation
- Pat the steak cubes dry with paper towels to remove surface moisture.
- In a medium bowl, whisk together soy sauce, beef broth, Worcestershire sauce, minced garlic, onion powder, smoked paprika, and black pepper. Taste the marinade and adjust seasoning if needed.
- Place the steak cubes in the crockpot and pour the marinade over them. Toss gently to coat every piece.
- Scatter the small pieces of butter over the top of the cubes.
Cooking
- Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the steak is fork-tender.
- Garnish with chopped parsley before serving and spoon the pan juices over your chosen side.

Notes
Sirloin is lean and cooks quickly in the crockpot; if using a fattier cut, drain excess fat before serving. To thicken the sauce after cooking, remove a half cup of the cooking liquid, whisk in 1 teaspoon cornstarch until smooth, then return it to the crockpot and cook on high for 10 to 15 minutes.
