  • 4 large large flour tortillas
  • 1 cup cooked and seasoned ground beef Use pre-cooked beef to speed things up.
  • 2 cups crispy tater tots Prepared according to package instructions.
  • 1 cup shredded cheddar cheese For a spicier option, use pepper jack cheese.
  • 1/2 cup sour cream For serving. Can swap for Greek yogurt.
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • to taste Salt and pepper Adjust to your preference.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a skillet over medium heat. Add the ground beef, season lightly with salt and pepper, and cook until browned and any excess moisture has evaporated.
  3. Stir in the taco seasoning and a splash of water. Let it simmer for 1 to 2 minutes, then remove the pan from the heat.
  4. Cook the tater tots according to the package instructions until they are crisp, either in the oven or air fryer.
  5. Lay a tortilla flat. Layer in some seasoned beef, a handful of crispy tater tots, and a sprinkle of shredded cheddar. Keep fillings toward the center to make rolling easier.
  6. Fold the sides of the tortilla in, then roll tightly from one edge to the other to enclose the filling.
  7. Place the burritos seam-side down on a baking sheet.
  8. Bake for 10 to 15 minutes until the tortillas are golden and the cheese is fully melted.
  9. Serve warm with a dollop of sour cream on the side.

Notes

Refrigerate leftover burritos in an airtight container. These will keep well for 3 to 4 days. To reheat, bake at 350°F (175°C) for 10 to 12 minutes. For freezing, wrap each burrito tightly and freeze up to 2 months.
