Preparation
- Preheat your oven to 400°F (200°C).
- Heat the olive oil in a skillet over medium heat. Add the ground beef, season lightly with salt and pepper, and cook until browned and any excess moisture has evaporated.
- Stir in the taco seasoning and a splash of water. Let it simmer for 1 to 2 minutes, then remove the pan from the heat.
- Cook the tater tots according to the package instructions until they are crisp, either in the oven or air fryer.
- Lay a tortilla flat. Layer in some seasoned beef, a handful of crispy tater tots, and a sprinkle of shredded cheddar. Keep fillings toward the center to make rolling easier.
- Fold the sides of the tortilla in, then roll tightly from one edge to the other to enclose the filling.
- Place the burritos seam-side down on a baking sheet.
- Bake for 10 to 15 minutes until the tortillas are golden and the cheese is fully melted.
- Serve warm with a dollop of sour cream on the side.

Notes
Refrigerate leftover burritos in an airtight container. These will keep well for 3 to 4 days. To reheat, bake at 350°F (175°C) for 10 to 12 minutes. For freezing, wrap each burrito tightly and freeze up to 2 months.
