Ingredients
  

Granola Base
  • 3/4 cup rolled oats
  • 1/2 tsp ground cinnamon
  • 1/4 cup almond butter Smooth or crunchy; can substitute with peanut butter or sunflower seed butter.
  • 3-4 tbsp honey Adjusted to taste.
  • 1 tsp vanilla extract
Filling and Toppings
  • 1 1/2 cups Greek yogurt
  • Berries of your choice strawberries, blueberries, raspberries, or a mix

Method
 

Preparation
  1. In a medium bowl, mix together rolled oats and ground cinnamon.
  2. Add almond butter, 3 tablespoons of honey, and vanilla extract.
  3. Stir until the mixture is sticky and holds together well.
  4. Line a muffin pan with paper liners.
  5. Spoon a tablespoon of the granola mixture into each liner and press down with your fingers or the back of a spoon to create a solid base.
  6. Add 1 to 2 tablespoons of Greek yogurt into each granola base and smooth it out.
  7. Top each cup with your choice of berries and sprinkle leftover granola on top for that extra crunch.
  8. Place the muffin pan in the freezer and let the cups freeze for at least 4 hours or until solid.
Serving
  1. To serve, allow the cups to sit at room temperature for 5 to 10 minutes so the yogurt softens slightly before peeling off the liners and enjoying.

Notes
