Preparation
- In a medium bowl, mix together rolled oats and ground cinnamon.
- Add almond butter, 3 tablespoons of honey, and vanilla extract.
- Stir until the mixture is sticky and holds together well.
- Line a muffin pan with paper liners.
- Spoon a tablespoon of the granola mixture into each liner and press down with your fingers or the back of a spoon to create a solid base.
- Add 1 to 2 tablespoons of Greek yogurt into each granola base and smooth it out.
- Top each cup with your choice of berries and sprinkle leftover granola on top for that extra crunch.
- Place the muffin pan in the freezer and let the cups freeze for at least 4 hours or until solid.
Serving
- To serve, allow the cups to sit at room temperature for 5 to 10 minutes so the yogurt softens slightly before peeling off the liners and enjoying.
