Preparation
  1. Preheat your oven according to the sugar cookie dough package instructions.
  2. Line a baking sheet with parchment paper. Press or roll the cookie dough into an even round or rectangle, aiming for a thickness of a quarter to a half inch.
  3. Bake as directed until golden brown. Once done, allow it to cool completely on a wire rack.
Cream Cheese Mixture
  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until silky smooth and creamy.
Assembly
  1. After the cookie has cooled, spread the cream cheese mixture evenly over the cookie crust, leaving about a quarter inch around the edges.
  2. Arrange your chosen fresh fruit artfully on top of the cream cheese layer.
  3. For that glossy finish, warm your fruit preserves and brush a thin layer over the fruit.
Chilling
  1. Chill the assembled pizza in the refrigerator for at least 30 minutes before slicing and serving.
