Ingredients
  

For the Chicken
  • 1 lb bone-in, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • to taste salt and pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp chili powder (optional)
For the Sauce
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp honey
  • cup BBQ sauce
  • 1 tbsp lemon juice
For Assembly
  • 8 small flour or corn tortillas
  • ½ cup shredded lettuce
  • ½ cup shredded cheese (cheddar or Monterey Jack)
  • ¼ cup diced red onion
  • ¼ cup chopped cilantro
  • Lime wedges, for garnish

Method
 

Preparation
  1. Season the chicken with olive oil, salt, pepper, paprika, garlic powder, onion powder, and chili powder in a bowl. Toss to coat evenly.
  2. Heat a skillet over medium-high heat and cook the chicken for 5 to 6 minutes per side or until the internal temperature reaches 165°F. Remove the chicken from the skillet and let it rest before slicing.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Stir in the honey, BBQ sauce, and lemon juice, then simmer for 2 minutes until slightly thickened.
  5. Slice or shred the cooked chicken and toss it in the warm garlic butter honey BBQ sauce.
  6. Warm the tortillas and build your tacos with the desired toppings.
