Ingredients
  

Steak and Seasoning
  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes Choose your preferred cut of steak.
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Vegetables
  • 1 medium zucchini, cut into half-moons Can be substituted with other vegetables like bell peppers or asparagus.
Cooking Fat
  • 3 tbsp butter Use dairy-free alternatives for a dairy-free version.
  • 1 tbsp olive oil
Aromatics
  • 3 cloves garlic, minced
Optional Garnish
  • Fresh parsley, chopped For garnish, optional.

Method
 

Preparation
  1. Pat the steak bites very dry with paper towels to ensure a good sear.
  2. Season the steak evenly with salt and black pepper.
Cooking the Steak
  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Add the steak bites to the skillet in a single layer, searing for about 1 to 2 minutes on each side until nicely browned. Work in batches if necessary to avoid overcrowding.
  3. Once done, remove the steak from the skillet and set it aside on a plate.
Cooking the Zucchini
  1. Lower the heat slightly and add butter to the same skillet.
  2. Once the butter melts, toss in the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  3. Add the zucchini to the skillet and cook for 3 to 5 minutes, stirring occasionally, until tender-crisp and lightly browned.
Bringing it Together
  1. Return the seared steak bites to the skillet and toss everything in the buttery garlic mixture until well coated.
  2. Cook for another 1 to 2 minutes to heat the steak through and meld the flavors together.
  3. If desired, sprinkle with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to keep the steak tender. For freezing, it's best to do so without the zucchini.
