Preparation
- Pat the steak bites very dry with paper towels to ensure a good sear.
- Season the steak evenly with salt and black pepper.
Cooking the Steak
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the steak bites to the skillet in a single layer, searing for about 1 to 2 minutes on each side until nicely browned. Work in batches if necessary to avoid overcrowding.
- Once done, remove the steak from the skillet and set it aside on a plate.
Cooking the Zucchini
- Lower the heat slightly and add butter to the same skillet.
- Once the butter melts, toss in the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Add the zucchini to the skillet and cook for 3 to 5 minutes, stirring occasionally, until tender-crisp and lightly browned.
Bringing it Together
- Return the seared steak bites to the skillet and toss everything in the buttery garlic mixture until well coated.
- Cook for another 1 to 2 minutes to heat the steak through and meld the flavors together.
- If desired, sprinkle with chopped parsley before serving.
