Cooking

- Cook brown rice or quinoa according to package instructions to have a warm base ready for your bowl.
Tzatziki preparation
- In a bowl, combine Greek yogurt, diced cucumber, minced garlic, dill, salt, and pepper. Mix until well combined.
Assembly
- Start layering your warm brown rice or quinoa, then add sliced chicken, diced tomatoes, red onion, and crumbled feta cheese.
- Drizzle with tzatziki and sprinkle fresh parsley on top. Serve immediately.

These bowls can be stored in airtight containers in the fridge for up to three days. Reheat in the microwave or oven until heated through. For longer storage, freeze the marinated chicken (uncooked) or assembled bowls without the tzatziki for up to three months.
