Greek Chicken Bowls

Ingredients
  

For the chicken and marinade
  • 2 pieces Chicken breasts Can substitute with chicken thighs for extra juiciness.
  • 3 tablespoons Olive oil
  • 2 cloves Garlic Minced.
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the bowl assembly
  • 1 cup Brown rice or quinoa Cooked according to package instructions.
  • 1 cup Cucumber Diced for tzatziki.
  • 1 cup Tomatoes Diced.
  • 1/2 cup Red onion Sliced.
  • 1/2 cup Feta cheese Crumble on top.
  • 1/4 cup Fresh parsley Chopped, for garnish.
For the tzatziki
  • 1 cup Greek yogurt
  • 1/2 cup Dill Fresh, for flavor.

Method
 

Preparation
  1. In a bowl, mix olive oil, minced garlic, lemon juice, salt, and pepper. Add the chicken breasts and let them marinate for at least 30 minutes.
Cooking
  1. Grill or bake the marinated chicken until fully cooked, about 6-7 minutes per side. Once done, slice it into strips.
  2. Cook brown rice or quinoa according to package instructions to have a warm base ready for your bowl.
Tzatziki preparation
  1. In a bowl, combine Greek yogurt, diced cucumber, minced garlic, dill, salt, and pepper. Mix until well combined.
Assembly
  1. Start layering your warm brown rice or quinoa, then add sliced chicken, diced tomatoes, red onion, and crumbled feta cheese.
  2. Drizzle with tzatziki and sprinkle fresh parsley on top. Serve immediately.

Notes
