  • 2 medium Zucchini Can also use bell peppers for color.
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
Cream Sauce
  • 1 tablespoon Dijon Mustard Optional
  • 1 cup Sour Cream or Greek Yogurt Greek yogurt can be used as a substitute.
  • 2 tablespoons Fresh Herbs (Chives or Parsley) Experiment with different herbs for flavor.
Base Options
  • 2 cups Cooked Rice or Mashed Potatoes Choose based on preference.

Preparation
  1. Trim and season the steak with garlic powder and onion powder.
  2. Toss sliced zucchini with olive oil.
Grilling
  1. Grill zucchini until marked and softened.
  2. Sear the steak to preferred doneness, aiming for an internal temperature of at least 145°F for medium-rare.
Sauce Preparation
