  • 1 pound ground beef (80/20) Gives good flavor and juiciness
  • 1 large onion, thinly sliced Yellow or sweet onion works best
  • 4 pieces hoagie rolls Or any long sandwich rolls
  • 2 cups cheese, provolone slices or Cheez Whiz Provolone gives a classic melt; Cheez Whiz is authentic for diner style
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Freshly ground black pepper

Method
 

Cooking
  1. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  2. Add the thinly sliced onion. Sauté until softened and slightly caramelized, about 5 to 7 minutes, stirring occasionally.
  3. Push the onions to one side of the skillet and add the ground beef to the empty side.
  4. Break the beef apart with a spatula and cook until fully browned, about 6 to 8 minutes, stirring occasionally so it cooks evenly.
  5. Season with salt and freshly ground black pepper, then stir the onions and beef together until well combined.
  6. Place the cheese on top of the beef and onion mixture, cover the skillet, and let sit until the cheese melts, about 2 to 3 minutes. If using Cheez Whiz, spoon it over the hot mixture and stir briefly to combine.
  7. While the cheese melts, toast the hoagie rolls until golden and slightly crisp in a toaster oven or under a broiler for 1 to 2 minutes. Watch closely to avoid burning.
  8. Spoon the cheesy beef and onion mixture into the toasted rolls and serve hot.

Notes

Store leftover beef mixture in an airtight container in the refrigerator for up to 3 to 4 days. For reheating, warm the filling gently in a skillet over medium-low heat until heated through, adding a splash of water or broth if it seems dry. You can also reheat portions in the microwave for 60 to 90 seconds, stirring halfway. For freezing, cool the mixture completely, portion into freezer-safe containers, and freeze for up to 3 months. Thaw in the refrigerator overnight before reheating.
