  • 1 lb ground turkey (preferably 93 percent lean)
  • 2 large sweet potatoes, peeled and diced into 1/2 inch cubes
  • 1 cup mixed vegetables (bell peppers, zucchini, carrots), diced Frozen mixed vegetables work well.
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika Use smoked paprika for deeper flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil for sautéing
  • Fresh herbs for garnish such as parsley or thyme

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and lightly grease a medium baking dish.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic. Sauté until the onion is translucent, about 3 to 4 minutes.
  3. Add the ground turkey to the skillet. Break it up with a spoon and cook until no pink remains and it begins to brown, about 6 to 8 minutes. Season with salt, pepper, and paprika while it cooks.
  4. Stir in the diced sweet potatoes and mixed vegetables. Toss so the spices coat the turkey and vegetables evenly. Cook for 2 to 3 minutes to combine flavors.
  5. Transfer the mixture to the greased baking dish and spread into an even layer. Cover the dish tightly with foil.
Baking
  1. Bake covered for 25 minutes to let the sweet potatoes soften and steam through.
  2. Remove the foil and return the dish to the oven. Bake for an additional 15 minutes, or until the sweet potatoes are tender and some edges are lightly browned.
  3. Remove from the oven and let rest for 5 minutes. Garnish with chopped fresh parsley or thyme before serving.
