Preparation
- Preheat the oven to 400°F (200°C) and lightly grease a medium baking dish.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic. Sauté until the onion is translucent, about 3 to 4 minutes.
- Add the ground turkey to the skillet. Break it up with a spoon and cook until no pink remains and it begins to brown, about 6 to 8 minutes. Season with salt, pepper, and paprika while it cooks.
- Stir in the diced sweet potatoes and mixed vegetables. Toss so the spices coat the turkey and vegetables evenly. Cook for 2 to 3 minutes to combine flavors.
- Transfer the mixture to the greased baking dish and spread into an even layer. Cover the dish tightly with foil.
Baking
- Bake covered for 25 minutes to let the sweet potatoes soften and steam through.
- Remove the foil and return the dish to the oven. Bake for an additional 15 minutes, or until the sweet potatoes are tender and some edges are lightly browned.
- Remove from the oven and let rest for 5 minutes. Garnish with chopped fresh parsley or thyme before serving.
