  • 1 lb ground turkey Lean variety recommended
  • 1 cup diced tomatoes Canned or fresh
  • 1 can black beans Rinsed and drained
  • 1 can corn Drained
  • 1 packet taco seasoning Store-bought or homemade
  • 1 onion chopped (yellow or sweet)
  • 1 bell pepper diced (any color)
  • 1 tbsp olive oil For sautéing

Method
 

Cooking
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the chopped onion and diced bell pepper. Cook, stirring occasionally, until softened and fragrant, about 4 to 5 minutes.
  3. Push the vegetables to the side of the skillet and add the ground turkey. Break it up with a spatula and cook until no longer pink and lightly browned, about 6 to 8 minutes.
  4. Sprinkle the taco seasoning over the turkey and stir so it evenly coats the meat and veggies.
  5. Pour in the diced tomatoes, drained black beans, and drained corn. Stir everything together until well combined.
  6. Reduce heat to medium-low and simmer for 5 to 10 minutes so the flavors meld. If the mixture looks dry, add a splash of water to loosen the sauce.
  7. Taste and adjust with salt and pepper.
  8. Serve right from the skillet, in warmed tortillas, over rice, or in bowls with your favorite toppings.

Notes
