- Warm a large skillet over medium heat and add the olive oil.
- Toss in the chopped onion and minced garlic. Sauté for about 3 to 4 minutes until the onion is translucent and fragrant.
- Add the ground turkey and use a spoon to break it up. Cook until evenly browned and no longer pink, approximately 6 to 8 minutes.
- Stir in the diced potatoes and sprinkle paprika, salt, and black pepper over the mixture. Mix everything well to coat the potatoes.
- Add chicken broth if using. Cover the skillet and reduce heat to medium-low. Cook for 15 to 20 minutes, checking until the potatoes are tender when pierced with a fork.
- Remove the lid, adjust seasoning if necessary, and garnish with chopped parsley before serving.
