  • 4 pieces boneless, skinless chicken breasts Use skin-on chicken if you prefer additional richness.
  • 1 cup Honey BBQ sauce Feel free to use your favorite brand or homemade sauce.

For the potatoes
  • 2 pounds baby potatoes Can be substituted with sweet potatoes or zucchini.
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste Salt and pepper
  • Fresh parsley for garnish Fresh parsley Optional, for garnish.

Method
 

Preparation
  1. Preheat your grill to medium heat and clean the grates with a bit of oil to prevent sticking.
  2. Pat the chicken breasts dry, then season them generously with salt and pepper. Brush the Honey BBQ sauce over the chicken, ensuring they are well-coated.
  3. While the chicken is grilling, preheat your oven to 400F (200C).
  4. In a baking dish, toss the baby potatoes with olive oil, garlic powder, Parmesan cheese, salt and pepper. Spread them out in a single layer in the dish.
Cooking
  1. Place the chicken on the grill and cook for 6 to 7 minutes per side. Be sure to baste with more sauce halfway through. Your chicken is ready when it reaches an internal temperature of 165F.
  2. Roast the potatoes in the oven for 25 to 30 minutes, stirring them halfway through, until they are golden and fork-tender.
  3. Once the chicken is done, allow it to rest for 3 to 5 minutes to let the juices redistribute.
Serving
  1. Serve the chicken alongside the cheesy garlic Parmesan potatoes, garnishing with fresh parsley for a touch of color.
