Honey Garlic Boneless Chicken Thighs

Main Ingredients
  • 6 pieces small boneless skinless chicken thighs
  • to taste Salt and black pepper for seasoning
For the Sauce
  • 2 Tbsp salted butter divided (1 Tbsp for searing, 1 Tbsp for the sauce)
  • 6 cloves garlic, minced (about 2 tsp)
  • 3 Tbsp honey adjust to taste
  • 2 Tbsp low sodium soy sauce use tamari for gluten-free
  • 1/2 tsp ground thyme
  • 1/2 tsp ground ginger

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels. Season both sides with salt and black pepper.
Cooking
  1. Heat an oven-safe skillet over medium-high heat. Add 1 tablespoon of butter. When hot and foaming, add the thighs. Sear for 4 to 5 minutes per side until golden brown. Transfer the seared thighs to a plate and set aside.
  2. Reduce heat to medium. Add the remaining 1 tablespoon of butter to the skillet. Sauté minced garlic for 30 to 60 seconds until fragrant, being careful not to brown.
  3. Whisk in honey, soy sauce, thyme, and ginger until smooth. Simmer the sauce for about 1 minute.
  4. Return chicken to skillet and spoon sauce over each piece to coat.
  5. Transfer skillet to the oven and bake for 20 to 25 minutes, until the thickest part of the chicken reaches 165°F (74°C).
  6. Remove from oven, let chicken rest for 3 to 5 minutes, then spoon sauce over thighs and serve.

Notes

For less sweetness, start with 2 Tbsp honey and adjust after tasting. For dairy-free, substitute butter with a neutral oil and finish with sesame oil.
