Preparation
- Preheat your oven to 400°F (200°C) or heat a heavy skillet over medium heat.
- In a medium bowl, whisk together the mango puree, soy sauce, honey, grated ginger, and minced garlic until smooth.
- Pat the chicken breasts dry and season generously with salt and pepper.
Cooking
- If you're baking: Lightly oil a baking dish, arrange the chicken inside, and brush it with the glaze. Bake for 25-30 minutes, brushing with more glaze halfway through.
- If you prefer skillet-searing: Add oil to the pan, sear each side for about 6-7 minutes, then brush with the glaze in the last few minutes of cooking.
- Check that the chicken reaches an internal temperature of 165°F (74°C).
Serving
- Let the chicken rest for 5 minutes before slicing. Serve with the remaining glaze, garnished with sesame seeds and green onions.
