  • 1 cup mango puree (fresh or canned) You can substitute with a store-bought version
  • 2 tablespoons soy sauce Consider gluten-free soy sauce for dietary restrictions
  • 2 tablespoons honey
  • 2 teaspoons fresh ginger, grated Fresh ginger enhances the flavor
  • 1 teaspoon garlic, minced Use fresh garlic for better taste
  • Salt and pepper to taste
  • Vegetable oil for cooking

  • Sesame seeds for garnish
  • Green onions, chopped for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or heat a heavy skillet over medium heat.
  2. In a medium bowl, whisk together the mango puree, soy sauce, honey, grated ginger, and minced garlic until smooth.
  3. Pat the chicken breasts dry and season generously with salt and pepper.
Cooking
  1. If you're baking: Lightly oil a baking dish, arrange the chicken inside, and brush it with the glaze. Bake for 25-30 minutes, brushing with more glaze halfway through.
  2. If you prefer skillet-searing: Add oil to the pan, sear each side for about 6-7 minutes, then brush with the glaze in the last few minutes of cooking.
  3. Check that the chicken reaches an internal temperature of 165°F (74°C).
Serving
  1. Let the chicken rest for 5 minutes before slicing. Serve with the remaining glaze, garnished with sesame seeds and green onions.
