  • 2 cups fresh spinach
  • 1 large bell pepper, diced

  2. Add the ground beef to the skillet. Cook it until browned, about 6 to 8 minutes, seasoning with salt and pepper to taste.
  3. Stir in the minced garlic and cook for 30 to 60 seconds until fragrant.
  4. Toss in the diced zucchini and bell pepper. Cook them for about 4 to 6 minutes until tender yet still crisp.
  5. Fold in the fresh spinach, cooking just until wilted, about 1 to 2 minutes.
  6. Remove the skillet from heat, squeeze the lemon juice over everything, sprinkle with Mediterranean spices, and toss to combine well.
