Ingredients
  

Steak Preparation
  • 1 lb Steak (sirloin or flank) You can substitute with chicken or plant-based protein.
  • 2 tbsp Olive oil For cooking the steak.
  • 2 cloves Garlic (minced) Add more or less based on preference.
  • Salt to taste Salt
  • Pepper to taste Pepper
Vegetable Mix
  • 1 cup Cherry tomatoes (halved)
  • 1 cup Cucumber (diced)
  • 0.5 medium Red onion (thinly sliced)
  • 0.5 cup Kalamata olives (pitted and halved)
  • 0.5 cup Feta cheese (crumbled)
  • 0.25 cup Fresh parsley (chopped)
  • 2 tbsp Lemon juice
Optional Base
  • 2 cups Cooked quinoa or rice Optional base for serving.

Method
 

Steak Preparation
  1. Season the steak generously with salt, pepper, and minced garlic.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear the steak in the hot skillet, cooking until it reaches your preferred doneness.
  4. Remove the steak from the skillet and allow it to rest for a few minutes.
Vegetable Assembly
  1. In a large bowl, toss together cherry tomatoes, cucumber, red onion, Kalamata olives, and fresh parsley.
  2. Drizzle the vegetable mix with olive oil and lemon juice, then mix well.
Serving
  1. Serve the sliced steak on top of the vegetable mix, optionally over quinoa or rice.

Notes

For best results, marinate the steak for a couple of hours before cooking. Slicing the steak against the grain helps maintain tenderness. This dish can be enjoyed cold as a salad too.
