Ingredients
  

Cookie Base
  • 1 tube refrigerated sugar cookie dough store-bought
Frosting
  • 8 oz cream cheese softened
  • 2/3 cup powdered sugar sifted if lumpy
  • 1 teaspoon vanilla extract
Toppings
  • 1 cup mixed fresh fruit, chopped e.g., kiwi, blueberries, strawberries

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Prepare the cookie dough according to the package instructions.
  3. Scoop out cookie rounds onto a lined baking sheet, leaving space between each.
  4. Bake for 8 to 12 minutes or until the edges are lightly golden.
  5. Let them cool completely on a wire rack.
  6. In a medium bowl, beat the softened cream cheese until creamy and smooth.
  7. Add in the powdered sugar and vanilla, and beat until light and fluffy.
  8. Chill both the cream cheese mixture and the chopped fruit in the refrigerator.
Assembly
  1. Once cookies are completely cool, dollop about a tablespoon of the cream cheese mixture onto each cookie, spreading it to the edges.
  2. Top with the chopped fruit and serve immediately.

Notes

Store cookie bases and cream cheese mixture separately to keep fresh. Cookie bases can be kept at room temperature for up to three days, and the cream cheese mixture in the fridge for up to a week. Assemble right before serving for best taste.
