  • 3 pieces ripe bananas, mashed Use very ripe bananas for maximum sweetness.
  • 1/3 cup melted butter
  • 3/4 cup sugar You can use brown sugar for a richer flavor.
  • 1 large egg, beaten Or use 1 tablespoon ground flaxseed + 3 tablespoons water for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour You can substitute with gluten-free flour.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and either grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas with a fork until mostly smooth.
  3. Mix the melted butter into the mashed bananas until well combined.
  4. Stir in the sugar, beaten egg (or flaxseed mixture), and vanilla extract until evenly blended.
  5. Sprinkle the baking soda and salt over the mixture and gently stir it in.
  6. Add the flour and fold it in carefully until no dry flour remains.
  7. Pour the batter into your prepared loaf pan and smooth out the top.
Baking
  1. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.
