  • 4 pieces boneless skinless chicken breasts (6-8 oz each)
  • 2 tablespoons olive oil for rubbing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (smoked or sweet) smoked gives a deeper flavor
  • 1 teaspoon dried oregano or Italian seasoning
  • 1 2 salt
  • 1 4 black pepper
  • 1 slices Lemon for garnish
  • 1 tablespoon Chopped fresh parsley or cilantro for garnish
Optional Marinade
  • 1 4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce use low-sodium or tamari for gluten-free
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 cloves garlic, minced
  • 1 4 black pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease a baking dish.
  2. Pat each chicken breast dry with paper towels. Place a breast between two sheets of plastic wrap and pound with a meat mallet or rolling pin to an even 3/4 inch thickness.
  3. In a small bowl, whisk together 2 tablespoons olive oil, garlic powder, onion powder, paprika, oregano, salt, and black pepper.
  4. If you choose to marinate, mix the marinade ingredients in another bowl, add the breasts, and refrigerate for 30 minutes to 2 hours. Remove from the marinade and pat dry before proceeding.
  5. Rub the seasoning mixture evenly over both sides of each chicken breast.
  6. Arrange the breasts in a single layer on the prepared baking sheet, leaving space between them for even air circulation.
Cooking
  1. Bake the chicken for 18 to 22 minutes, checking the thickest part with an instant-read thermometer which should read 165°F (75°C).
  2. Remove from the oven and let the chicken rest for 5 minutes before slicing.
  3. Garnish with lemon slices and chopped parsley or cilantro. Serve warm.

Notes

For best results, flatten the breasts to even thickness, pat dry before seasoning, and use an instant-read thermometer for doneness. If you marinate the chicken, avoid long periods in acidic marinades when using metal containers.
