Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or foil.
  2. Pat each chicken thigh dry with paper towels to ensure crispy skin.
  3. Arrange the chicken thighs on the prepared baking sheet with the skin side facing up.
Seasoning
  1. In a small bowl, whisk together olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, and oregano until well combined.
  2. Brush or drizzle the mixture generously over each chicken thigh, ensuring they are well coated.
Cooking
  1. Roast in the oven for 35 to 45 minutes, checking for doneness at the 35-minute mark. The thickest part should reach 165°F (74°C).
  2. Allow the chicken to rest for 5 minutes before serving. Optionally, sprinkle with chopped parsley for a fresh touch.
