Preparation
- Preheat your oven to 375°F (190°C).
- In a shallow dish, combine the breadcrumbs, half of the Parmesan, Italian seasoning, salt, and pepper. Mix well to distribute the flavors.
- In another shallow bowl, whisk together the eggs and milk until fully smooth.
- Place the flour in a third shallow dish.
- Pat the chicken breasts dry with paper towels. Dredge each piece in the flour, shaking off any excess.
- Dip the floured chicken into the egg mixture before pressing it into the breadcrumb mixture to ensure a thorough coating.
Cooking
- Heat olive oil in a large skillet over medium heat. Once hot, add the chicken and cook for 3 to 4 minutes on each side until golden brown.
- Transfer the seared chicken into a baking dish, arranging them in a single layer.
- In a small bowl, mix the remaining Parmesan with mozzarella and minced garlic. Sprinkle this cheesy blend over each chicken breast.
- Bake for 20 to 25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and lightly browned.
- Allow to rest for 3 to 5 minutes before serving.
