  • 1 cup bread crumbs plain or panko for extra crunch
  • 1 cup grated Parmesan cheese divided
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, combine the breadcrumbs, half of the Parmesan, Italian seasoning, salt, and pepper. Mix well to distribute the flavors.
  3. In another shallow bowl, whisk together the eggs and milk until fully smooth.
  4. Place the flour in a third shallow dish.
  5. Pat the chicken breasts dry with paper towels. Dredge each piece in the flour, shaking off any excess.
  6. Dip the floured chicken into the egg mixture before pressing it into the breadcrumb mixture to ensure a thorough coating.
Cooking
  1. Heat olive oil in a large skillet over medium heat. Once hot, add the chicken and cook for 3 to 4 minutes on each side until golden brown.
  2. Transfer the seared chicken into a baking dish, arranging them in a single layer.
  3. In a small bowl, mix the remaining Parmesan with mozzarella and minced garlic. Sprinkle this cheesy blend over each chicken breast.
  4. Bake for 20 to 25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and lightly browned.
  5. Allow to rest for 3 to 5 minutes before serving.

Notes
