Ingredients
  

For the sandwich
  • 2 slices slices of bread (white, sourdough, whole wheat, or your favorite) Choose your preferred type of bread.
  • 2 slices slices of cheese (cheddar, mozzarella, provolone, or a blend) Any preferred cheese will work.
  • 2 tablespoons pesto (store-bought or homemade) Use your favorite pesto.
  • 1 tablespoon butter Use olive oil for a lighter finish.

Preparation
  1. Spread 1 tablespoon of pesto on the inner surface of each slice of bread until both sides are coated.
  2. Place the two slices of cheese between the non-pesto sides, ensuring the pesto faces the cheese, then gently press the sandwich together.
Cooking
  1. Heat a skillet over medium heat and add the butter. Let it melt until it starts to foam.
  2. Carefully lay the sandwich in the skillet and cook for 2 to 3 minutes until the first side is golden brown.
  3. Flip the sandwich and cook for another 2 to 3 minutes, pressing lightly with a spatula if needed, until the cheese is fully melted and both sides have that perfect golden color.
  4. Once done, transfer the sandwich to a cutting board, slice it in half, and enjoy immediately.
