  • 2 large sweet potatoes, peeled and cubed Use uniform cubes for even roasting.
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil

  • to taste freshly ground black pepper

Preparation
  1. Preheat your oven to 400°F (200°C) and place a rack in the center.
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper until lightly coated.
  3. Spread the sweet potatoes in a single layer on a rimmed baking sheet.
  4. Warm a skillet over medium heat. Add the sausage and brown, breaking it into bite-sized pieces until well seared and no longer pink inside.
Cooking
  1. Push the sausage to the edge of the pan, add the minced garlic to the empty space, and cook for about 1 minute until fragrant.
  2. Drizzle honey over the browned sausage, stirring to coat. Let it warm for about 30 seconds until syrupy.
  3. Pour the honey garlic sausage over the sweet potatoes and gently toss to combine.
  4. Roast for 25 to 30 minutes, stirring once halfway through, until the sweet potatoes are tender and caramelized.
  5. Let the sheet rest for a couple of minutes before serving. Garnish with chopped parsley if desired.
