  • 2 pounds large shrimp (21–24 count), peeled and deveined
  • 1 tablespoon Old Bay seasoning
  • 1 tablespoon salt (for the cooking water)
  • 2/3 cup mayonnaise (or plain Greek yogurt) Greek yogurt can be used for a lighter version.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon butter (plus more to grease the pan)
  • 1/2 cup panko bread crumbs
  • 4 ounces shredded mozzarella cheese
  • 4 ounces shredded medium cheddar cheese

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and butter a 2 1/2-quart casserole dish.
  2. In a large pot, bring water to a rolling boil. Add salt and Old Bay seasoning.
  3. Cook the shrimp in the boiling water until they turn opaque, about 30 seconds. Drain and transfer them into a mixing bowl.
  4. Into the bowl, add mayonnaise, garlic powder, and black pepper. Mix until the shrimp are lightly coated.
  5. Gently fold in the mozzarella and cheddar cheese until they’re evenly distributed.
  6. Spread the shrimp and cheese mixture into the prepared casserole dish.
  7. Melt the remaining butter and stir it with the panko bread crumbs. Sprinkle the mixture over the top of the casserole.
Baking
  1. Bake uncovered for 13 to 15 minutes until bubbly and the shrimp reaches an internal temperature of 145°F.
  2. For a golden touch, broil for 1 to 2 minutes, but keep an eye on it to prevent burning.
  3. Allow to rest for 15 minutes before serving.

Notes
