  • 1 bag Doritos Crunchy topping
  • 1 lb ground beef or turkey Can substitute with beef sausage for richer flavor
  • 1 packet taco seasoning Follow instructions on packet for water amount
  • 1 cup lettuce, chopped Use fresh for crisp texture
  • 1 cup tomatoes, diced Fresh vegetables are preferred
  • 1 cup cheddar cheese, shredded Pepper jack can be used for a spicy kick
  • 1/2 cup black beans, rinsed and drained Can use pinto or kidney beans for variety
  • 1/2 cup corn, canned or frozen (thawed)
  • 1/2 cup sour cream Consider a dairy-free alternative if needed
  • 1/4 cup salsa

Method
 

Preparation
  1. In a skillet over medium heat, cook the ground beef or turkey until browned, breaking it into small pieces as it cooks.
  2. Drain any excess fat from the skillet.
  3. Stir in the taco seasoning along with the specified amount of water from the packet. Let the mixture simmer until it is well-coated with seasoning and most of the liquid has reduced.
  4. In a large bowl, combine the chopped lettuce, diced tomatoes, shredded cheese, black beans, and corn.
  5. Add the warm cooked meat mixture to the salad and gently toss to combine.

Notes
