  • 1 pound ground beef can substitute with turkey or chicken
  • 1 onion diced onion
  • 1 can corn, drained (15 ounces)
  • 1 can black beans, rinsed and drained (15 ounces) can swap with pinto or kidney beans
  • 1 can diced tomatoes with green chilies (10 ounces)
  • 1 tablespoon chili powder
  • to taste Salt and pepper
  • 2 cups shredded cheddar cheese using block cheese for better melt
  • 1 bag frozen tater tots (32 ounces) ensures crispy texture on top

Method
 

Preparation
  1. Brown the ground beef and diced onion in a skillet over medium heat, stirring occasionally until the beef is no longer pink. Drain any excess fat.
  2. Transfer the cooked beef mixture into your slow cooker.
  3. Add the drained corn, rinsed black beans, diced tomatoes, chili powder, salt, and pepper. Mix everything well.
  4. Top with shredded cheddar cheese, spreading it evenly.
  5. Layer the frozen tater tots on top of the cheese.
Cooking
  1. Cover the slow cooker and cook on low for 6 to 7 hours or on high for about 3 to 4 hours.
  2. Once cooked, serve warm and enjoy!
