Preparation
- Pat the chicken dry with paper towels and season both sides evenly with salt and black pepper.
- In a small bowl, whisk together honey, soy sauce, ketchup, minced garlic, grated ginger if using, vinegar, and red pepper flakes until the honey dissolves and the sauce is smooth.
- Place the seasoned chicken in the slow cooker in a single layer.
- Pour the sauce over the chicken, turning the pieces to ensure they are well coated.
Cooking
- Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the internal temperature reaches 165°F and the chicken is tender.
- To thicken the sauce, remove the chicken and set aside. Mix cornstarch with water to form a smooth slurry, then stir into the cooking liquid.
- Turn the slow cooker to high and cook until the sauce thickens and becomes glossy.
- Return the chicken to the slow cooker or pour the thickened sauce over the chicken before serving.
