Ingredients
  

Meat and Tortillas
  • 1 lb ground beef (80/20 blend)
  • 8 small tortillas (flour or corn)
Toppings
  • 1 cup lettuce, shredded
  • 1 medium tomato, diced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup pickles, sliced
  • 1/4 cup mayonnaise or your favorite sauce
Seasoning
  • Salt and pepper to taste

Method
 

Cooking the Beef
  1. Start by heating a heavy griddle or large skillet over medium-high heat until it’s slightly smoking.
  2. Divide the ground beef into eight equal pieces and roll each into a ball. Lightly season with salt and pepper.
  3. Place a beef ball on the hot griddle and press down gently to form a thin patty.
  4. Cook without moving the patty for 2 to 3 minutes until the edges are crispy and browned. Flip and cook for another 2 to 3 minutes until fully cooked through.
Warming the Tortillas
  1. Warm the tortillas on the griddle for about 30 seconds on each side, just until they’re soft.
Assembling the Tacos
  1. Assemble your tacos by placing a beef patty on each tortilla.
  2. Top with shredded lettuce, diced tomato, cheddar cheese, sliced pickles, and a drizzle of mayonnaise or your chosen sauce.
  3. Serve immediately to keep everything delightfully crispy.
