Cooking the Beef
- Start by heating a heavy griddle or large skillet over medium-high heat until it’s slightly smoking.
- Divide the ground beef into eight equal pieces and roll each into a ball. Lightly season with salt and pepper.
- Place a beef ball on the hot griddle and press down gently to form a thin patty.
- Cook without moving the patty for 2 to 3 minutes until the edges are crispy and browned. Flip and cook for another 2 to 3 minutes until fully cooked through.
Warming the Tortillas
- Warm the tortillas on the griddle for about 30 seconds on each side, just until they’re soft.
Assembling the Tacos
- Assemble your tacos by placing a beef patty on each tortilla.
- Top with shredded lettuce, diced tomato, cheddar cheese, sliced pickles, and a drizzle of mayonnaise or your chosen sauce.
- Serve immediately to keep everything delightfully crispy.
