  • 1/2 cup unsalted butter, melted Use dairy-free butter for a dairy-free option.
  • 1/2 cup packed light brown sugar Can be replaced with maple syrup.
  • 1/4 cup granulated sugar Reduce to 3 tablespoons if you prefer less sweetness.
  • 2 large eggs, beaten
  • 1/4 cup whole milk Substitute with any unsweetened plant milk for dairy-free.
  • 1 teaspoon ground cinnamon Increase to 1 1/4 teaspoons for more warmth.
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F and lightly grease an 8x8-inch baking dish.
  2. Peel the sweet potatoes and finely grate them using a box grater or food processor.
  3. In a large bowl, whisk the melted butter, brown sugar, granulated sugar, beaten eggs, milk, and vanilla until smooth and glossy.
  4. Add the grated sweet potatoes to the wet mixture and stir until evenly coated.
  5. Sprinkle in the cinnamon, nutmeg, and ginger. Fold gently so the spices are distributed without overmixing.
  6. Transfer the batter into the prepared baking dish, smoothing the top lightly.
Baking
  1. Bake for 45 to 55 minutes, or until the top is golden and caramelized and the center is set (a toothpick should come out mostly clean with a few moist crumbs).
  2. Remove from the oven and let it cool for at least 10 minutes before cutting.
