  • 1 small onion, diced Adds flavor to the beef mixture.
  • 2 cups shredded cheddar cheese, divided Use a different cheese like Monterey Jack if preferred.
  • 1 bag frozen tater tots (32 oz) Main topping for the casserole.
  • Salt and pepper, to taste For seasoning.
  • Optional seasonings: garlic powder, paprika, or your favorite spices Enhance flavor as desired.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Heat a skillet over medium heat and add the ground beef. Break it up and cook until fully browned, about 6 to 8 minutes.
  3. Add the diced onion and continue cooking until softened, about 3 to 4 minutes. Season with salt, pepper, and optional spices.
  4. Drain any excess fat from the skillet.
  5. Stir in the cream of mushroom soup and sour cream until the mixture is smooth. Heat through for about 2 to 3 minutes.
Assembly and Cooking
  1. Grease a 9x13-inch casserole dish and spread the beef mixture evenly across the bottom.
  2. Sprinkle 1 cup of shredded cheddar cheese over the beef layer.
  3. Arrange the frozen tater tots in a single layer on top of the cheese.
  4. Bake for 25 to 30 minutes until the tater tots turn golden brown and the edges are bubbling.
  5. Carefully remove the dish from the oven and sprinkle the remaining 1 cup of cheese on top.
  6. Return to the oven and bake for an additional 3 to 5 minutes, just until the cheese melts and is bubbly.
  7. Allow the casserole to rest for 5 minutes before serving.
