Preparation
- Preheat your oven to 375°F (190°C).
- Rub each chicken breast with olive oil, then season both sides with salt and pepper.
- Heat an ovenproof skillet over medium-high heat. Sear the chicken for about 5 minutes on each side until golden brown, then remove it from heat briefly.
- Lower the heat and add minced garlic to the skillet, cooking it for about 30 seconds until it’s fragrant.
- Pour in the chicken broth, scraping the browned bits from the skillet; let it simmer for 1-2 minutes.
- Stir in the sour cream until smooth, allowing it to bubble gently for around 5 minutes.
- Top each chicken breast with shredded Jack cheese, then transfer the skillet to the oven.
- Bake for about 15 minutes or until the cheese is melted and the chicken reaches an internal temperature of 165°F (74°C).
- Garnish with chopped green onions and a sprinkle of paprika before serving.
