  • 3-4 pieces boneless, skinless chicken breasts Trim excess fat
  • 1 cup shredded Jack cheese Mild or pepper Jack
  • 2 tablespoons olive oil
  • 2-3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Paprika for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rub each chicken breast with olive oil, then season both sides with salt and pepper.
  3. Heat an ovenproof skillet over medium-high heat. Sear the chicken for about 5 minutes on each side until golden brown, then remove it from heat briefly.
  4. Lower the heat and add minced garlic to the skillet, cooking it for about 30 seconds until it’s fragrant.
  5. Pour in the chicken broth, scraping the browned bits from the skillet; let it simmer for 1-2 minutes.
  6. Stir in the sour cream until smooth, allowing it to bubble gently for around 5 minutes.
  7. Top each chicken breast with shredded Jack cheese, then transfer the skillet to the oven.
  8. Bake for about 15 minutes or until the cheese is melted and the chicken reaches an internal temperature of 165°F (74°C).
  9. Garnish with chopped green onions and a sprinkle of paprika before serving.
