  • 1/2 cup granulated sugar (use brown sugar for a deeper flavor)
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted (or use a neutral oil if you prefer)

Preparation
  1. Preheat the oven to 350°F.
  2. Grease a 9×13-inch baking dish with butter or nonstick spray.
  3. Spread the bread cubes evenly in the prepared dish.
  4. In a large bowl, whisk eggs, milk, sugar, vanilla, cinnamon, and salt until smooth.
  5. Pour the custard evenly over the bread. Press the cubes down gently so they absorb the liquid.
  6. Drizzle the melted butter over the top in an even layer.
  7. Let the casserole sit for 10 minutes so the bread soaks up the custard. To make ahead, cover and refrigerate up to overnight; return to room temperature for 15 minutes before baking.
Baking
  1. Bake uncovered for about 40 minutes, or until the top is golden and the center is set (a knife inserted near the center should come out mostly clean).
  2. Remove from the oven and let cool for 5 to 10 minutes before slicing.
  3. Serve warm with maple syrup, a dusting of powdered sugar, or fresh berries.
