Preparation
- Preheat the oven to 350°F.
- Grease a 9×13-inch baking dish with butter or nonstick spray.
- Spread the bread cubes evenly in the prepared dish.
- In a large bowl, whisk eggs, milk, sugar, vanilla, cinnamon, and salt until smooth.
- Pour the custard evenly over the bread. Press the cubes down gently so they absorb the liquid.
- Drizzle the melted butter over the top in an even layer.
- Let the casserole sit for 10 minutes so the bread soaks up the custard. To make ahead, cover and refrigerate up to overnight; return to room temperature for 15 minutes before baking.
Baking
- Bake uncovered for about 40 minutes, or until the top is golden and the center is set (a knife inserted near the center should come out mostly clean).
- Remove from the oven and let cool for 5 to 10 minutes before slicing.
- Serve warm with maple syrup, a dusting of powdered sugar, or fresh berries.

Notes
For best results, use slightly stale bread. This casserole can be customized with added fruit, nuts, or chocolate, and accommodates make-ahead prep for any busy morning.
