  • 1/4 cup rice vinegar Can substitute with apple cider vinegar or white wine vinegar
  • 1 tablespoon sugar Feel free to substitute with honey or maple syrup
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce Choose low-sodium if preferred
  • 1 clove garlic, minced Or use 1/2 teaspoon garlic paste
  • 1 teaspoon red pepper flakes Adjust according to your spice preference
  • Sesame seeds For garnish
  • Chopped green onions For garnish

Method
 

Preparation
  1. Wash the cucumbers and trim their ends, then slice them thinly, about 1/8-inch thick.
  2. Place the cucumber slices in a medium bowl and sprinkle a small pinch of salt over them. Allow them to sit for 5 minutes, then blot away excess moisture with paper towels.
  3. In a separate bowl, whisk together the rice vinegar, sugar, sesame oil, soy sauce, minced garlic, and red pepper flakes until the sugar is completely dissolved.
  4. Pour the dressing over the cucumber slices and toss gently to coat.
  5. Let the salad sit at room temperature for at least 10 minutes, or refrigerate for 30 minutes for a cooler dish.
  6. Before serving, sprinkle sesame seeds and chopped green onions on top.
