- Wash the cucumbers and trim their ends, then slice them thinly, about 1/8-inch thick.
- Place the cucumber slices in a medium bowl and sprinkle a small pinch of salt over them. Allow them to sit for 5 minutes, then blot away excess moisture with paper towels.
- In a separate bowl, whisk together the rice vinegar, sugar, sesame oil, soy sauce, minced garlic, and red pepper flakes until the sugar is completely dissolved.
- Pour the dressing over the cucumber slices and toss gently to coat.
- Let the salad sit at room temperature for at least 10 minutes, or refrigerate for 30 minutes for a cooler dish.
- Before serving, sprinkle sesame seeds and chopped green onions on top.
